Since I'm on a new healthy kick, I've been all about soups lately. Last night I made the most amazing Provencal Vegetable Soup from Ina Garten's Barefoot in Paris cookbook. The recipe was very easy to make and the best part was the lucious pistou, basically a pesto with tomato paste. Once the soup is done mix in a quarter cup of the pistou and it adds intense richness and flavor. You must try this recipe, it's an excellent dinner for a blustery winter day.
Mmm... add an extra dollop of pistou and a good piece of crusty rosemary and olive oil bread and you've got perfection in a bowl. (And the best part... it's fits into my healthy eating regimen!)
